摘 要:为加强淀粉产品控制,通过对淀粉生产工艺中采集到的大量数据的分析和现场勘查实验,确定淀粉生产过程中存在的细菌污染源,使用臭氧对仓储玉米进行杀菌,缩短了玉米储存时间5~7 d,降低了原料玉米的细菌总数。及时清除淀粉生产系统中设备上的物料残留,减少残留物对淀粉的污染,使淀粉的细菌数由4.0×10^4 CFU/g降低到1.0×10^4 CFU/g以下,在淀粉质量提高的同时,也进一步提升了高附加值的淀粉产品利润,增加了企业效益。In the production process of corn starch,due to the complex control of the process and equipments,it was difficult to completely kill heat-resistant bacteria.As a result,the total number of bacteria in the starch products exceeds the standard,resulting in the decline of the quality of the starch products,which seriously damaged the enterprise s benefits.In order to further strengthen the control of starch products,a large number of data were collected and analyzed in the starch production process and field investigation experiments were conducted to determine the bacterial pollution sources in the starch production process.Ozone was used to sterilize the stored corn,shortening the storage time of corn from 5 to 7 days and reducing the total number of bacteria in the raw corn.At the same time,the material residues on the equipments in the starch production system were removed in time to reduce the contamination of the residue to the starch,so that the number of bacteria in the starch was reduced from 4.0×10^4 CFU/g to below 1.0×10^4 CFU/g.While improving the quality of starch,the profit of starch products with high added value was further improved and the enterprise benefits increased.
