摘 要:食盐作为国民必需的调味品同时作为钠离子、碘等的营养强化剂,在人们的生活中具有极其重要的作用。但是现行国家标准中食盐指标的测定方法存在着操作繁复,误差较大,灵敏度不高等问题。因此,本研究在对食盐样品进行1000倍稀释后,通过对调谐参数、He气流量和样品稀释等条件的优化,提出了食盐样品经1%硝酸-5%甲醇溶液稀释1000倍后采用电感耦合等离子体质谱(ICP-MS)法进行多指标的同时测定,方法的检出限为0.002μg/L^0.691mg/L,精密度为1.6%~8.1%,加标回收率为94.5%~115.7%,均符合食品理化检测的技术要求。结果表明,所建的ICP-MS法完全满足食盐中8项指标的同时测定要求,且具有精确度高,灵敏度高,操作简单,测试时间短等的优点,为食盐指标测定技术的提高和相应国家标准的修订提供参考。Table salt,a common condiment in food,a nutrient fortifier of sodium ion and iodine,plays an extremely important role in people’s life. However,the measurement of table salt indexes in the current national standard has problems of large error,complicated procedure and low sensitivity. This study optimized the detection parameters as well as the He gas flow rate. The best detecting method is to dilute 1000 times with 1% nitric acid-5% methanol solution,and then using inductively coupled plasma mass spectrometry(ICP-MS)to simultaneous determination multiple indexes of salt. The detection limit of the method is 0.002μg/L ~ 0.691 mg/L,the precision is 1.6% ~ 8.1%,and the recovery rate is 94.5% ~ 115.7%. All data meet physical and chemical testing requirement of food. The results show that ICP-MS method meets the requirements for simultaneous determination of table salt’s multiple indexes very well,and has the advantages of simple operation,high accuracy,high sensitivity,and short test time. The study provides a reference in revising the national standard in salt detection.
