摘　　要：本研究以豆渣粉、菠萝汁、白砂糖、柠檬酸、稳定剂等原料制备膳食纤维菠萝功能饮料,利用单因素和响应面实验,研究原料的不同添加量对饮料风味的影响。最终得出各原料添加量为:菠萝汁20 g、豆渣粉0.3 g、白砂糖6 g、柠檬酸0.1 g、羧甲基纤维素钠0.1 g时饮料口感最优。本产品对豆渣进行利用,达到了节约资源的目的。In this study,the dietary fiber pineapple drink was prepared from soybean residue powder,pineapple juice,granulated sugar,citric acid,stabilizer and other materials.The single factor and response surface experiments were used to study the influence of different amounts of raw materials on the flavor of beverage.Finally,it is concluded that the added amount of each raw material is:pineapple juice 20g,soy powder 0.3g,granulated sugar 6g,citric acid 0.1g,stabilizer 0.1g.This product makes use of bean dregs and achieves the purpose of saving resources.
