摘  要:选取广东地区种植的美香粘优质稻谷品种为原料,模拟南方高温高湿储藏环境,分析劣变过程中优质稻谷的基本理化品质、储藏品质及质构特性变化情况,并进行了各指标的相关性分析,筛选出稻谷劣变敏感指标。结果表明:高温高湿的储藏过程中,优质稻米的质量指标、储存品质、口感和质构特性等均明显下降,尤其是高温高湿劣变6个月后,优质稻谷储存品质已达不宜存状态。In this paper,high quality paddy(Mei Xiangzhan)planted in Guangdong Province were chosen as experimental materials,which was stored under the conditions of simulated the high temperature and high humidity in souther china,the basic physical and chemical indexes,quality indexes and texture properties were tested periodically and the correlation analysis of each indexes and the sensitive indexes of paddy aging were carried out.The results showed that the quality indexes,storage indexes,taste indexes and texture properties of the high quality paddy were decreased gradually in high temperature and humidity especially after 6 months in this environment,and the quality was close to not being suitable for storage.
