摘  要:目前,贝类水产品批量化的传统加工方法仍然是采用大口锅将贝类蒸煮后,再采用大量人工进行剥壳、取肉。随着海洋养殖技术的不断进步,越来越多新产品、新技术的出现,将为水产养殖产业化的新技术提供广阔的发展空间。专业机构通过大量调研,逐步形成了养殖场批量贝壳类产品的蒸煮肉壳分离综合技术和养殖笼再处理回用等绿色制造技术,具有广阔市场前景和社会效益。At present,the traditional processing method of mass production of shellfish aquatic products is still to use a large pot to cook shellfish,and then use a large number of manual shelling and meat extraction.With the continuous progress of marine aquaculture technology,more and more new products and new technologies appear,which will provide broad development space for the new technology of aquaculture industrialization.Through a large number of research,professional institutions have gradually formed the comprehensive technology of cooking,meat and shell separation and recycling of aquaculture cages for batch shellfish products in farms,which has broad market prospects and social benefits.
