摘  要:为探索固态速溶茶贮藏过程中环境及包装材质对水分、儿茶素和茶黄素含量的影响,设计敞口和密封的贮藏试验。结果表明,6小时内,0.5~3 g固态速溶茶敞口贮藏于15~55℃、50%~90%空气温湿度时,水分含量增加值为1.28%~30.72%;其中低温下含水率随湿度增加及时间的延长呈缓慢增长态势,高温高湿下出现吸水糊化现象。60天内,3 g固态速溶茶密封贮藏于塑料自封袋中,含水率达10%左右,样品失去流动性,塑料自封袋的阻湿性降低,不利于固态速溶茶的贮藏,铝箔袋中的速溶茶则维持在6.1%~7.5%,铝箔袋更有利于保持速溶茶的品质。同时,密封贮藏期间儿茶素、茶黄素含量较为稳定。综上,低温低湿有利于固态速溶茶的贮藏;固态速溶茶含水率随贮藏环境温度或湿度升高而增加。同一贮藏条件下,铝箔袋的阻湿性优于塑料自封袋。固态速溶茶含水率应控制在8%以下,可通过低温、低湿或致密的包装材料来实现。In order to explore the influence of environment and packaging materials on the content of moisture,catechins,and theaflavins during the storage of instant tea,the open and sealed storage test was investigated.The results showed that within 6 h,when 0.5~3 g of instant tea was stored at 15~55℃and 50%~90%humidity,the moisture content increased by 1.28%~30.72%.The moisture content at low temperature increased slowly with the increase of humidity and time,and the phenomenon of water absorption and gelatinization occured under high temperature and high humidity.Within 60 days,moisture content of 3 g instant tea which was sealed in a plastic ziplock bag was about 10%,and the sample lost fluidity.The humidity-preventing of the plastic ziplock bag was reduced,which was not conducive to the storage of instant tea.Moisture content of instant tea in aluminum foil bags was maintained at 6.1%~7.5%,and the aluminum foil bag was more conducive to the quality of instant tea.In addition,the content of catechins and theaflavins were relatively stable during sealed storage.In summary,low temperature and low humidity were conducive to the storage of instant tea;the moisture content of solid instant tea increased as the temperature or humidity increased.Under the same storage conditions,the humidity-preventing of aluminum foil bag was better than that of plastic ziplock bag.The moisture content of solid instant tea should be below 8%,which could be achieved through low temperature,low humidity and dense packaging materials.
