摘  要:目的:研究大蒜素对AA肉鸡血清生化指标、屠宰性状和肌肉品质的影响。方法:选取体重相近、健康的180只1日龄AA肉仔鸡,随机分成4组,即对照组、试验A、B、C组,每组3个重复,每个重复15只。对照组饲喂基础日粮,试验A、B、C组分别在基础日粮中饲喂添加100、200、300 mg/kg的大蒜素,试验期为6周,比较各组间指标。结果:与对照组相比,21日龄时,试验组C的谷丙转氨酶质量分数显著下降(P<0.05),试验组A、B、C的甘油三酯含量均显著下降(P<0.05),但谷草转氨酶、葡萄糖、总胆固醇、高密度脂蛋白、低密度脂蛋白、总蛋白、白蛋白、球蛋白、尿素、钙、磷质量分数无显著差异(P>0.05)。42日龄时,试验组B、C的总蛋白、球蛋白质量分数显著升高(P<0.05),试验组B、C的尿素质量分数显著下降(P<0.05),但谷丙转氨酶、谷草转氨酶、葡萄糖、总胆固醇、甘油三酯、高密度脂蛋白、低密度脂蛋白、白蛋白、钙、磷质量分数无显著差异(P>0.05);试验组B的腿肌率显著升高(P<0.05),但屠宰率、半净膛率、全净膛率、胸肌率无显著差异(P>0.05),胸肌和腿肌的肉色(L*、a*和b*)、pH、剪切力、滴水损失率无显著差异(P>0.05)。结论:大蒜素对肉鸡的部分血清生化指标和胴体品质有一定改善作用,且以添加200 mg/kg大蒜素的效果较优。Objective:To investigate the effect of allicin on serum biochemical indexes,slaughter traits and muscle quality of broilers.Methods:180 healthy 1-day-old AA broilers with similar weight were randomly divided into 4 groups,with 3 replicates per group and 15 broilers per replicate.The control group was fed with basic diet,and the test group A,B,and C were fed with basal diet supplemented with 100,200 and 300 mg/kg allicin separately,and the experimental period was 6 weeks.The index between each groups were finally compared.Results:Compared with the control group,at the age of 21 days,the content of alanine aminotransferase in test Group C decreased significantly(P<0.05),and the content of triglyceride in Group A,B and C decreased significantly(P<0.05),but there was no significant difference in the content of glutamic oxalacetic transaminase,glucose,total cholesterol,high-density lipoprotein,low-density lipoprotein,total protein,albumin,globulin,urea,calcium and phosphorus(P>0.05).At the age of 42 days,the content of total protein and globulin in test Group B and C increased significantly(P<0.05),the content of urea in test Group B and C decreased significantly(P<0.05),but there was no significant difference in the content of alanine aminotransferase,glutamic oxalacetic transaminase,glucose,total cholesterol,triglyceride,high-density lipoprotein,low-density lipoprotein,albumin,calcium and phosphorus(P>0.05).The leg muscle rate of test Group B was increased significantly(P<0.05),but there was no significant difference in the slaughter rate,half net carcass rate,whole net carcass rate and chest muscle rate(P>0.05),and there was no significant difference in meat color(L*,a*and b*),pH,shear force and dripping loss rate of chest muscles and leg muscles(P>0.05).Conclusion:That adding allicin could improve the partial serum biochemical and indexes carcass quality of broilers to a certain extent,and the optimum effect was added 200 mg/kg allicin.
