摘  要:在柠檬绿茶酒最佳酿造工艺条件的基础上,进一步探究柠檬绿茶酒的抗氧化能力。结果表明,以0.1 g/L维C作对比,用量为0.5 mL时,柠檬绿茶酒与维C的还原力分别为0.504和0.361,超氧阴离子清除率分别为67.68%和76.53%,DPPH自由基清除率分别为79.36%和82.93%,表明柠檬绿茶酒的还原能力较高,并具有清除超氧阴离子和DPPH自由基的能力,具有较好的抗氧化活性。In this paper,the antioxidant capacity of lemon green tea wine was further explored based on the optimum brewing conditions.The results showed that based on the VC 0.1 g/L,and adding amount of 0.5 mL,lemon green tea wine with VC reduction force were 0.504,0.361,super oxygen anion clearance rate were 67.68%,76.53%,DPPH free radical clearance rate were 79.36%,82.93%,showed that lemon green tea wine reduction ability was higher,and have the ability to remove superoxide anion and DPPH free radicals,has good antioxidant activity.
