摘 要:赣南是客家人最早聚居地之一,有丰富的客家传统食品,黄元米果是其中之一。赣南地区客家传统食品历史悠久、风味独特,具有市场开发前景。介绍了客家传统食品黄元米果的历史和制作工艺现状,论述了开发黄元米果的可行性,指出黄元米果开发过程中存在的问题,并对其健康持续的产业化发展提出了合理建议,旨在为黄元米果的生产研究提供新的思路。Gannan is one of the earliest Hakka settlements,with rich traditional Hakka food,Huangyuan rice cake is one of them.The traditional Hakka food in Gannan area has a long history and unique flavor,and has the prospect of market development.This paper introduced the history and production technology of traditional Hakka food Huangyuan rice cake,discussed the feasibility of developing Huangyuan rice cake,pointed out the problems existing in the development process of Huangyuan rice cake,and put forward some reasonable suggestions for its healthy and sustainable industrial development,in order to provide some views for the production research of Huangyuan rice cake.
