摘 要:目的调查了解北京市顺义区初中学生及家长对学校午餐现状及满意度,为学校加强供餐管理,改善午餐质量,改善学生营养提供科学依据。方法随机选取两所中学320名学生及其家长开展学生午餐满意度及营养相关知识态度行为调查。结果学生午餐质量达标率为86.56%,重点中学高于普通中学(χ^2=16.995,P=0.001);油炸食品经常食用率为30.63%,普通中学高于重点中学(χ^2=13.025,P=0.001)。学生午餐剩饭率为34.06%,剩饭菜种类中主食、肉菜、素菜均有。学生对学校午餐满意率顺位由高到低依次为就餐环境(74.06%)、饭菜份量(67.50%)、饭菜卫生(67.19%)、饭菜外观(66.88%)、饭菜口味(63.44%)、食物搭配(60.31%),其中男生对午餐的就餐环境(χ^2=14.515,P=0.001)、饭菜外观(χ^2=7.738,P=0.005)、饭菜份量(χ^2=20.111,P=0.001)、饭菜口味(χ^2=4.232,P=0.040)满意率显著低于女生。家长对各因素的满意率顺位由高到低依次为就餐环境(62.81%)、饭菜卫生(55.00%)、饭菜份量(54.38%)、饭菜外观(52.81%)、饭菜口味(50.94%)、食物搭配(50.00%)和午餐价格(44.69%)。结论学生和家长对午餐普遍满意度不高,主要问题为饭菜口味和搭配。学校应努力丰富菜品种类,改善饭菜口感,注重营养搭配,提升饭菜质量。同时加强对学生的营养宣教工作,与家长协作共同引导学生建立合理营养和平衡膳食理念,养成良好饮食习惯。Objective To understand the school lunch status and satisfaction of students and their parents,and to provide scientific basis for strengthening the school feeding management,improving the quality of lunch and improving the nutrition level of students.Methods A survey on students’lunch satisfaction and nutrition-related knowledge,attitude and behavior was conducted among 320 students and their parents in two middle schools selected randomly.Results The students'lunch quality compliance rate of 86.56%,which was higher in the key middle school than in the ordinary middle school(χ^2=16.995,P=0.001).The proportion of students who often ate fried food was 30.63%,which was higher in ordinary middle school(χ^2=13.025,P=0.001).Student lunch leftover proportion was 34.06%and leftovers included staple food,meat dishes and vegetarian dishes.The order of students’satisfaction with the school lunch factors was as follows:the dining surrounding(74.06%),followed by amount of meals(67.50%),food hygiene(67.19%),the appearance of the food(66.88%),food taste(63.44%),and food combination(60.31%).Among them,the satisfaction rate of boys to lunch dining surrounding(χ^2=14.515,P=0.001),appearance of the food(χ^2=7.738,P=0.005),followed by amount of meals(χ^2=20.111,P=0.001),and food taste(χ^2=4.232,P=0.040)was significantly lower than girls.The order of parents’satisfaction with each factor was as follows:dining surrounding(62.81%),food hygiene(55.00%),followed by amount of meals(54.38%),appearance of the food(52.81%),food taste(50.94%),food combination(50.00%),and food price(44.69%).Conclusions Students and parents generally do not have a high degree of satisfaction with lunch,the main problems reflected in the food taste and collocation.Therefore,the school should strive to enrich the variety of dishes,improve the taste of food,pay attention to nutritional collocation,and improve the quality of meals.At the same time,the school should strengthen the work to educate students about nutrition,and cooperate with parents to gu
