摘  要:爱德万甜是从阿斯巴甜衍生而来的超高甜度二肽甜味剂,比蔗糖还要甜20000倍。本文介绍了爱德万甜的性质、甜味特征和应用,综述了近年来合成爱德万甜的研究进展。爱德万甜的合成过程主要包括两步反应:中间体3-羟基-4-甲氧基肉桂醛的合成以及由该中间体或该中间体加氢后得到的3-羟基-4-甲氧基苯丙醛与阿斯巴甜进行临氢反应合成爱德万甜。对于中间体的合成,有3条工艺路线:异香草醛-乙醛法、异香草醛-醋酸乙烯法和羧酸催化氢化法,其中异香草醛-乙醛法原料成本较低,但收率不高;异香草醛-醋酸乙烯法收率较高,但醋酸乙烯用量较大;羧酸催化氢化法原料价格昂贵且不易获得,收率也较低。对于该中间体与阿斯巴甜的临氢反应合成爱德万甜,用铂-炭催化剂时爱德万甜的收率最高。Advantame is a new type of dipeptide sweetener with ultra-high potency,which is 20000 times sweeter than sucrose.In this paper,the properties,sweet taste characteristics and applications of advantame were introduced,and the recent research progress in the synthesis of advantame was reviewed.The synthesis process of advantame mainly includes two steps:the synthesis of intermediate 3-hydroxy-4-methoxy cinnamaldehyde and the synthesis of advantame by the reaction of the intermediate or its hydrogenated product 3-hydroxy-4-methoxy phenylpropyl aldehyde with aspartame and hydrogen.For the synthesis of the intermediate,there are three routes:isovanillinacetaldehyde route,isovanillin-vinyl acetate route,and carboxylic acid catalytic hydrogenation route,in which isovanillin-acetaldehyde route has the advantage of lower raw material cost,but the yield is not high;isovanillinvinyl acetate route achieves higher yield,but the amount of vinyl acetate used is large;and carboxylic acid catalytic hydrogenation route employs expensive raw material which is not readily available,and the yield is low.For the reaction of 3-hydroxy-4-methoxy cinnamaldehyde with aspartame and hydrogen,the yield of advantame is the highest when platinum-carbon catalyst is used.
