摘 要:在过氧化氢氧化降解琼脂的基础上,采用喷雾干燥法制备双功能改性氧化琼脂并对其性质进行测定。以溶解温度和产品收率为主要评价指标,凝胶强度为次要评价指标,通过单因素试验确定最佳喷雾干燥工艺为:添加5%氯化钾和20%蔗糖作为组合助溶剂,进风温度150 ℃,风机流量45 m^(3)/min,蠕动泵转速8 r/min,喷雾压力0.2 MPa。在此条件下,改性琼脂产品收率达到49.5%,溶解温度降低至81.5 ℃,凝胶强度降低至137.9 g/cm^(2),白度和灰分增加,融化温度、凝胶温度和透明度均降低。研究结果表明,采用助溶剂协同喷雾干燥技术制备双功能改性氧化琼脂,能显著降低琼脂的溶解温度,并使其具有更优良的溶解特性。Based on the degradation of agar by hydrogen peroxide,the bifunctional modified oxidized agar was prepared by spray-drying and its properties were determined.The dissolving temperature and the product yield were the main evaluation indexes,and the gel strength was the secondary evaluation index.The optimal spray-drying process was determined by single factor text:5% potassium chloride and 20% sucrose as the combined cosolvent,the inlet air temperature 150 ℃,the fan flow 45 m^(3)/min,the peristaltic pump speed 8 r/min,and the spray pressure 0.2 MPa.Under these conditions,the yield of the modified agar reached 49.5%,the dissolving temperature dropped to 81.5 ℃,and the gel strength decreased to 137.9 g/cm^(2).Meanwhile,whiteness and ash content increased,the melting temperature,gelling temperature and transparency were all reduced.The results showed that the bifunctional modified oxidized agar was prepared by co-solvent and spray drying.It could significantly reduce the dissolving temperature of agar and make it have better solubility characteristics.
