摘  要:恩施玉露是我国历史上保存下来的唯一蒸汽杀青针形绿茶。为解决目前市场上恩施玉露茶加工所用品种较为单一的问题,选用12个茶树品种采摘的鲜叶制成恩施玉露,对其进行感官审评并测定生化品质成分,研究了不同茶树品种的恩施玉露茶适制性,筛选出鄂茶14号、鄂茶1号、鄂茶10号较为适制恩施玉露茶品种。Enshi Yulu is the only needle-like green tea which adopts steaming blanching preserved in Chinese history.In order to solve the shortage of suitable cultivars for processing Enshi Yulu in current tea market,fresh leaves from 12 tea cultivars were picked to make Enshi Yulu in this experiment.Sensory evaluation was then conducted and their quality components were also measured.According to the results,five tea cultivars,including Echa 14,Echa 1,Echa 10 were identified as the suitable cultivars of Enshi Yulu tea.
