摘　　要：蜜饯作为较为广泛使用食品添加剂的食品,其安全问题越来越被人们关注,食品添加剂的正确使用对维持蜜饯类食品的特征及风味起着至关重要的作用。本文主要分析了食品添加剂在蜜饯食品中的应用及其安全性,指出食品添加剂在蜜饯食品中应用的发展趋势,并对蜜饯食品中食品添加剂的合理使用提出建议。Sweetmeat as a food that uses more widely used food additives,people pay more and more attention to its safety issues.The correct use of food additives plays a vital role in maintaining the characteristics and flavor of sweetmeats.This article mainly analyzes the application and safety of food additives in sweetmeats,points out the development trend of food additives in sweetmeats,and puts forward suggestions on the rational use of food additives in sweetmeats.
