摘 要:凤文化在我国可考的历史有七千多年,与西凤酒的起源"秦酒"拥有相同的历史源头。研究凤文化传承与西凤酒的酿造工艺发展与创新,可谓十分相宜。探索西凤酒酿造工艺在当代的发展与创新,可以发现它与凤文化的继承与弘扬相得益彰。根据对于西凤酒酿造过程的研究可以发现,西凤酒的选料、大曲制造、发酵、勾兑调味等工艺制作过程,展现了其特有的香型形成因素,需在各个酿造细节分寸之间寻求平衡点,以达到酒体醇香绵长、口有回甘的特性。同时,西凤酒兼具浓香型与清香型的独特品质,与凤文化蕴含的"和""美"寓意在本质上相融相称。Phoenix culture in China has a history of more than 7,000 years,and has the same historical origin with"Qin Wine",the predecessor of Xifeng Liquor.It is very suitable to study the interaction between the inheritance of phoenix culture and the development and innovation of Xifeng Liquor production technology.We can find that the development and innovation of Xifeng Liquor production technology and the inheritance and promotion of phoenix culture complement each other.The production process of Xifeng Liquor,including material selection,Daqu making,fermentation,blending and flavoring,reveals its unique flavor forming factors;the balance point between all the factors needs to be find to achieve the characteristic mellow and sweet flavor of Xifeng Liquor.Meanwhile,Xifeng Liquor has the characteristics of both Nongxiang Baijiu and Qingxiang Baijiu,which is compatible with the implications of"harmony"and"beauty"in phoenix culture.
