摘  要:采用大米为基质栽培杏鲍菇,并将得到的子实体与木屑栽培的杏鲍菇的营养成分进行比较,结果米基杏鲍菇的碳水化合物含量提高164.71%,蛋白质含量提高68%,膳食纤维含量提高500%,氨基酸总量提高63.23%。米基杏鲍菇必需氨基酸指数(EAAI)、生物价(BV)分别为66.06、60.31,均高于木屑杏鲍菇。This study tried to use rice substrate to cultivate Pleurotus eryngii fruiting bodies,and to compare the nutrient composition with the Pleurotus eryngii cultivated in sawdust substrate.The results showed that the rice substrate could improve the overall nutrient level of the fruiting body.the carbohydrate content of the fruiting body of Pleurotus eryngii increased by 164.71%,the protein content increased by 68%,the fiber content increased by 500%,the total amino acid content increased by 63.23%,compared with the fruiting body of Pleurotus eryngii cultivated by sawdust substrate.The essential amino acid index(EAAI),and the biological valence(BV)were 66.06 and 60.31,both are higher than the fruiting cultivated by sawdust substrate.
