摘 要:目的了解宝鸡市不同种类市售散装即食食品中金黄色葡萄球菌的污染状况及影响因素。方法采集2014-2018年5年间宝鸡市部分市售散装即食食品538份,根据GB 4789-2016《食品微生物学检验金黄色葡萄球菌检验》对其进行检测并使用微量肉汤稀释法对其进行耐药性鉴定。结果538份样品中,检出金黄色葡萄球菌40份,总检出率为7.43%。不同种类即食食品中几乎均有检出。采样地点中市场金黄色葡萄球菌检出率最高,检出阳性占比11.66%,采样时间中5-9月夏秋季节金黄色葡萄球菌检出率较其他月份高,检出率差异有统计学意义(P<0.05)。检出的阳性菌株对青霉素普遍耐药,耐药率达95%,对2种以上抗生素耐药率达77.5%,同时检出2株耐甲氧西林金黄色葡萄球菌(MRSA),占分离株的5%。结论宝鸡市部分市售各类散装即食食品中金黄色葡萄球菌污染严重,对抗生素广泛耐药。相关部门应加强食品监管,采取行之有效的措施来保障食品安全,预防食源性疾病的发生。Objective To understand the contamination status of Staphylococcus aureus in commercially available ready-to-eat food in bulk in Baoji City,analyze the influencing factors.Methods Totally 538 samples of commercially available ready-to-eat food in bulk were collected in Baoji City from 2014-2018,and were tested according to the Microbiological examination of food-Staphylococcus aureus examination(GB 4789-2016).The drug resistance was identified by broth microdilution method.Results Staphylococcus aureus was found in 40 of 538 samples,with the total detection rate of 7.43%,and it was found in all kinds of ready-to-eat food.In the sampling locations,the detection rate of Staphylococcus aureus in markets was the highest,and the positive samples accounted for 11.66%.For the sampling time,the detection rate of Staphylococcus aureus in May-September(Summer and Autumn)was higher than those in other months,and the difference was statistically significant(P<0.05).The positive strains were resistant to penicillin,the resistance rate was 95%,and the resistance rate to more than two kinds of antibiotics was 77.5%.Two strains of methicillin-resistant Staphylococcus aureus(MRSA)were detected,accounting for 5%of the isolates.Conclusion The contamination of Staphylococcus aureus in some commercially available ready-to-eat food in bulk in Baoji City is serious,and the strains are widely resistant to antibiotics.Relevant departments should strengthen food supervision and take effective measures to ensure food safety and prevent the occurrence of food-borne diseases.
