摘  要:硒是人体和动物必需的微量元素,具有抗癌、预防心血管疾病、增强生殖功能、抗氧化、减缓损伤以及提高身体免疫力等作用,体内缺乏硒元素会导致40多种疾病,但是硒摄入过多也会导致硒中毒,因此食品中硒含量过高或过低都会给健康带来不利影响,精准测定食品中硒元素含量十分重要。本文就近年来食品中硒含量检测前处理方法的原理、适用条件、优缺点,检测方法的原理、应用、特点进行了综述,以期对食品中硒的检测提供借鉴。As an essential trace element for human and animals,selenium has effects on anti-cancer,preventing of cardiovascular disease,enhancing reproductive function,anti-oxidation,slowing down damage and improving body immunity.The lack of selenium can lead to more than 40 diseases,but excessive intake of selenium can also lead to selenium poisoning.As both too high and too low selenium content in foods can bring adverse effects on health,to accurately determine the content of selenium in foods becomes very important.This paper summarized the principles,application conditions,advantages and disadvantages of the methods for pretreatments of foods and determination of selenium content in foods in recent years,in order to provide reference for the determination of selenium in food.
