摘  要:目的了解杭州市西湖区食品中铝残留量情况,为进一步开展食品风险评估,发现安全隐患提供参考依据。方法根据食品安全风险监测的要求,2015年-2019年在西湖区不同区域的不同采样地点采集不同类型的食品共422件。采用铝分光光度法进行食品中铝的检测。按《食品添加剂使用标准》(GB 2760—2014)等国家标准统计超标情况。用χ2检验分析食品中铝残留量超标率的差异,多因素分析采用二分类Logistic回归分析方法。结果西湖区食品中铝残留量总体检出率为82.14%,超标率为9.00%。油炸面制品超标率最高为22.22%;2015年超标率为17.14%,总体呈下降趋势;散装食品超标率(17.55%)高于定型食品(2.14%)。结论 2015年-2019年杭州市西湖区部分市售食品中铝残留量超标率总体水平不高,但个别类别食品中超标和非法添加现象不容忽视,应加大监管力度,加强宣贯,改进生产工艺,保障食品安全。Objective To understand the situation of Aluminum residues in food in Xihu District of Hangzhou,and to provide reference for further food risk assessment and potential safety hazards. Methods According to the requirements of food safety risk monitoring,from 2015 to 2019,a total of 422 different types of food were collected at different sampling locations in different areas of the Xihu District. Aluminum spectrophotometry was used to detect aluminum in food. According to GB 2760—2014 Food Additives Use Standards and other national standards for statistics on exceeding standards,Chi-square test was used to analyze the difference in the excess rate of aluminum residues in food. Multivariate analysis was performed using a two-class logistic regression analysis method. Results The overall detection rate of aluminum residue in food in West Lake District was82. 14%,and the over-standard rate was 9. 00%. The highest rate of fried noodle products exceeded 22. 22%;the rate of exceeded standards in 2015 was 17. 14%,which is generally on the decline;the rate of exceeded standards for bulk foods( 17. 55%) is higher than that for shaped foods( 2. 14%). Conclusion The overall level of excess aluminum residues in some commercially available foods in Xihu District from 2015 to 2019 is not high. However,the phenomenon of excessive levels and illegal additions in some types of foods cannot be ignored. Supervision should be strengthened,publicity should be strengthened,production processes should be improved,and protection guaranteed food safety.
