摘 要:“食品添加剂”作为食品科学与工程专业本科生专业选修课之一,具有知识点繁杂、实际应用性强等特点。为了强化以“学生为中心”的教学理念,充分调动学生的主观能动性,进而改进课程的授课质量,在“食品添加剂”教学的课程设计及教学过程中引入了思维导图辅助教学。从“食品添加剂”课程特点、思维导图的概念及其在“食品添加剂”教学中的应用案例等几个方面,探讨了思维导图在“食品添加剂”本科生教学过程中的积极意义。As one of the elective courses for undergraduates majoring in food science and engineering,Food Additives has the characteristics of complicated knowledge and strong practical application.In order to strengthen the student-centered teaching concept,fully mobilize the subjective initiative of students,and then improve the teaching quality of the course,mind map has been introduced to assist teaching in curriculum design and teaching process of the Food Additives teaching.In this paper,the positive significance of mind map in the teaching of Food Additives for undergraduates was discussed from the following aspects:the course features of Food Additives,the concept of mind map and its application cases in the teaching of Food Additives.
