摘　　要：抗氧化剂作为一种活性物质,可以应用于包装材料中,用以延长食品的保质期。为了进一步提高食品包装用抗氧剂的使用,通过对近年来国内外食品包装用抗氧化材料的研究现状和研究成果的概述和分析,介绍了食品包装用抗氧化材料的抗氧化机理、抗氧化剂种类、食品包装用抗氧化材料的制备方法和在食品保藏中的研究进展。最后对其进行总结和展望,为食品包装用抗氧化材料的进一步制备与发展提供科学的研究基础。As an active substance,antioxidants can be used in packaging materials to extend the shelf life of food.In order to further improve the use and research of antioxidants for food packaging,through an overview and analysis of the research status and research results of antioxidant materials for food packaging at home and abroad in recent years,the article introduces the mechanism of antioxidant materials for food packaging,types of antioxidants,preparation methods of antioxidant materials for food packaging,and research progress in food preservation.Finally,it is summarized and prospected to provide a scientific research foundation for the further preparation and development of antioxidant materials for food packaging.
