摘  要:为开发大麦资源,明确大麦幼苗中的主要挥发性成分,采用顶空固相微萃取(headspace solid phase microextraction,HS-SPME)和气相色谱-质谱(gas chromatography-mass spectrometry,GC-MS)联用技术分析两种大麦幼苗中的挥发性成分和真空干燥后大麦幼苗中挥发性成分的变化。从两种大麦鲜苗中分别鉴定出36种和52种成分,大麦干苗中分别鉴定出35种和34种成分。两个品种大麦幼苗中的挥发性成分种类基本相似,但其主要挥发性成分和含量存在差别。大麦幼苗中的挥发成分包括醛、酮、醇、酸、酯、烃、酚、醚、呋喃、吡嗪、吡咯以及吲哚等多类物质。真空干燥后大麦幼苗中的挥发性成分种类减少,变化较大,原有的醛类成分减少,吡嗪类成分增加。To develop barley grass resources,volatile compounds in two barley grass and the change after vacu-um drying were investigated by headspace solid phase micro-extraction(HS-SPME)followed by gas chro-matography-mass spectrometry(GC-MS).36 and 52 kinds of components were identified from the two fresh barley grass,while 35 and 34 components were identified from dried barley grass.The types of volatile compo-nents in the two varieties of barley grass were similar,but their main volatile components and content were dif-ferent.Volatile components in the barley grass included aldehydes,ketones,alcohols,acids,esters,hydrocar-bons,phenols,ethers,furans,pyrazines,pyrroles and indole.After vacuum drying,the types of volatile com-ponents in fresh barley grass decreased greatly,the original aldehyde components decreased,and the pyrazine components increased.
