山葡萄及其杂交品种葡萄籽含油量及油品质调查分析

摘　　要：采用索氏提取法对25种山葡萄籽中的油进行提取,分析不同品种葡萄籽出油率的差异。结果表明,出油率因品种的不同差异明显,范围为3.09%~11.95%,平均出油率为7.51%,其中“92”最高,“84001”最低。对“92”“雪兰红”“长白五号”“长白八号”和“北红”5个品种的葡萄籽粗油的酸价、过氧化值、碘值、皂化值4个指标进行测定分析,结果表明5个品种的葡萄籽油的酸价、过氧化值、碘值、皂化值均达到食品安全国家标准;其中“92”各项数据均为最低,而“雪兰红”各项数据(除碘值外)均为最高,总体上“92”油脂品质较好。“北红”的碘值最高,不饱和脂肪酸最高。研究结果可为山葡萄种质资源的评价及葡萄籽油的开发利用提供参考依据。To analyze the differences in oil yield of different varieties of grape seeds,soxhlet extraction method was used to extract the oil in 25 kinds of grape seeds.According to the results,the oil yield ranges from 3.09%~11.95%,varying significantly due to different varieties.The average oil yield was 7.51%,and“92”performed the best showing the highest oil yield while“84001”performed the worst.Meanwhile,the acid value,peroxide value,iodine value and saponification value of grape seed raw oil of 5 varieties were measured,including“92”“Sherland Red”“Long White Five”“Long White Ei-ght”and“North Red”.The results showed that all the data could meet the national standard of food safety.Among the 5 va-rieties mentioned above,“92”showed the lowest value in each analysis,while“Sherland Red”showed the highest value(except iodine value).The oil quality of“92”was the best,and“North Red”showed the highest iodine value and the highest unsaturated fatty acids value.This research can provide a reference for the evaluation of grape germplasm resources and the development and utilization of grape seed oil.
