摘 要:为了探讨短期窖藏对马铃薯块茎品质指标的影响,为马铃薯块茎适宜窖藏时间的筛选、加工品质的提高提供研究基础,试验以8个马铃薯品种为研究材料,采用窖藏法贮藏60 d,在贮藏0、30、60 d时分别测定马铃薯块茎淀粉、还原糖、维生素C、蛋白质、总类胡萝卜素含量及总抗氧化能力,分析其差异并探究变化规律,同时采用隶属函数法对品种进行综合评价。结果表明,贮藏60 d后,块茎淀粉、维生素C含量呈下降趋势,还原糖、蛋白质和类胡萝卜素含量呈增加趋势,且均达显著性差异;总抗氧化能力与贮藏时间相关性不显著;60 d窖藏后,马铃薯块茎类胡萝卜素含量与总抗氧化能力相关性达显著性水平,推测贮藏后期块茎总抗氧化能力与类胡萝卜素含量相关。在60 d短期窖藏期间,块茎的品质指标变化趋势各异,筛选出综合品质较优的马铃薯品种为红颜、川引2号和华颂7号。To explore the effect of short-term cellar on the quality index of potato tuber,and provide a research basis for the cellar time and the improvement of processing quality of potato tuber,8 potato varieties were used as the research materials in the experiment.The cellar storage method was used to store for 60 d.The potato tuber starch,reducing sugar,vitamin C,protein,total carotenoid content and total antioxidant capacity were measured at 0,30,60 d of storage,and the differences and the change law were analyzed and explored.And at the same time,the membership function method was used for comprehensive evaluation of varieties.The results showed that after 60 d of storage,the tuber starch and vitamin C content showed a downward trend,and the reducing sugar,protein and carotenoid content showed an increasing trend,and all reached a significant difference.The total antioxidant capacity was not significantly correlated with the storage time.After the 60 d hoard,the correlation between the carotenoid content of potato tubers and the total antioxidant capacity reached a significant level.It was inferred that the total antioxidant capacity of the tubers during the later storage period was related to the carotenoid content.In summary,during the short-term cellar of 60 d,the quality indicators of tubers had different trends.The varieties with better comprehensive quality were selected as Hongyan,Chuanyin 2 and Huasong 7.
