摘  要:以辛酸、癸酸、月桂酸及三丁酸甘油酯为原料,采用两步合成方法合成中短链脂肪酸结构脂。第一步为3种中链脂肪酸甘油三酯的酯化合成,第二步为3种中短链脂肪酸结构脂的酶法酯交换合成。采用单因素试验和正交试验,确定合成中短链脂肪酸结构脂的最佳工艺条件。3种中链脂肪酸甘油三酯合成的最佳条件:反应时间6 h、反应温度160℃、底物物质的量之比6∶1,所得3种中链脂肪酸甘油三酯含量均大于70%,分子蒸馏分离后3种中链脂肪酸甘油三酯含量均达到90%以上。3种中短链脂肪酸结构脂的酯交换合成最佳条件为底物物质的量之比1∶3、反应时间6 h、反应温度60℃、脂肪酶用量5%,所得产物3种中短链脂肪酸结构脂产率均达到60%以上。Middle-and short-chain triglycerides(MSCT)were synthesized from caprylic acid,decanoic acid,lauric acid and glyceryl tributyrate by two-step transesteration.The first step was the esterification synthesis of three medium-chain fatty acid triglycerides.The second step was the enzymatic transesterification synthesis of three medium MSCT.Through single factor and orthogonal experiments,determine the best process conditions for MSCT.The best conditions for the synthesis of three medium-chain triglycerides were reaction time 6 h,reaction temperature 160℃,and substrate molar ratio 6∶1,and the obtained three medium-chain triglycerides content was all greater than 70%.After molecular distillation separation,the content of three medium-chain fatty acid triglycerides all reached more than 90%.The best conditions for the transesterification synthesis of three MSCT were the substrate molar ratio 1∶3,the reaction time 6 h,the reaction temperature 60℃,and the lipase dosage 5%,and the yields of the three MSCT of the obtained products were all more than 60%.
