摘  要:以牛骨粉和大豆粉为主要原料,采用纳豆芽孢杆菌(Bacillus natto)SWS-001发酵制备多肽螯合钙,并以螯合钙产量为响应值,采用单因素试验及响应面试验对其发酵培养基组成进行优化。结果表明,B.natto SWS-001发酵制备多肽螯合钙的最优发酵培养基组成为牛骨粉3.5%、大豆粉4.8%、葡萄糖0.5%、KH_(2)PO_(4)0.2%、K_(2)HPO_(4)·3H_(2)O 0.52%、MgSO_(4)·7H_(2)O 0.1%。在此优化条件下,多肽螯合钙含量最高达到(707.47±32.16)mg/L,较优化前提高29.42%。Peptides chelated calcium was prepared by Bacillus natto SWS-001 fermentation using bovine bone powder and soybean flour as the main raw materials.Using the yield of chelated calcium as the response value,the composition of fermentation medium was optimized by single factor tests and response surface tests.The results showed that the optimal fermentation medium composition for the preparation of peptides chelated calcium by B.natto SWS-001 was bovine bone powder 3.5%,soybean flour 4.8%,glucose 0.5%,KH_(2)PO_(4)0.2%,K_(2)HPO_(4)·3H_(2)O 0.52%and MgSO_(4)·7H_(2)O 0.1%.Under the optimized conditions,the content of peptides chelated calcium reached the highest of(707.47±32.16)mg/L,which was 29.42%higher than that before optimization.
