摘  要:为了研究微量元素对饲料油脂氧化的影响,选择畜禽饲料中常用的3种微量元素原料,模拟实际生产中8%仔猪预混料中油脂与微量元素的添加量,将3种锌离子与大豆油按6∶1 000乳化后与大豆油混合,分为对照组(大豆油中不加锌离子)、硫酸锌组(100 g大豆油中添加1.48 g一水硫酸锌)、氧化锌组(100 g大豆油中添加0.75 g氧化锌)和甘氨酸锌组(100 g大豆油中添加1.96 g甘氨酸锌),每个处理3个重复,在广东夏季(6—9月)高温高湿条件下,将混合后的油脂在避光和密封的条件下储放0、10、20、30、40、50和60 d,检测各处理组的酸价、碘价、过氧化值和丙二醛含量。结果显示:第20~60天时(除第40天硫酸锌组酸价),3种锌离子组的酸价和丙二醛含量均显著高于对照组(P<0.05);第10~60天时,硫酸锌组的过氧化值显著高于对照组(P<0.05),第30~60天时,氧化锌组的过氧化值显著高于对照组(P<0.05),第10~60天时,甘氨酸锌组的过氧化值与对照组无显著差异(P>0.05)。随着存储时间的延长,与储放第0天相比,各组的酸价、过氧化值和丙二醛含量均呈线性升高的趋势,碘价均呈线性降低的趋势;在存储期间,与氧化锌组和甘氨酸锌组相比,硫酸锌组的酸价上升幅度最小,碘价降低幅度最快,过氧化值和丙二醛含量上升幅度最大。结果表明:硫酸锌更容易导致大豆油的氧化酸败,建议在预混料配制时优先选择甘氨酸锌和氧化锌作为微量元素原料。In order to identify the effects of trace elements on lipid oxidation in feed, three kinds of microelement raw materials, namely zinc sulfate, zinc oxide and zinc glycine, which are commonly used in livestock and poultry feed, were selected, in this experiment, to simulate the addition of oil and trace elements in 8% premix for piglets in commercial production. The ratio of the three kinds of zinc ions to soybean oil was set at 6∶1 000 each, which were divided into the control group(without zinc ions in soybean oil), the zinc sulfate groups(with 1.48 g of zinc sulfate monohydrate wadded to 100 g of soybean oil), the zinc oxide group(with 0.75 g of zinc oxide added to 100 g of soybean oil) and the zinc glycinate group(with 1.96 g of glycine zinc added to 100 g of soybean oil). Each treatment had three replicates. After emulsification, the three kinds of zinc ions were mixed with soybean oil. The mixed oils were then stored under the conditions of high temperature and high humidity in summer in the Guangdong area, in darkness, and in sealed containers, for 0, 10, 20, 30, 40, 50 and 60 d, respectively. The acid value, iodine value, peroxide value and malondialdehyde content of each treatment group were detected. The results showed that the acid value and malondialdehyde content in the three zinc ions groups(except that the acid value of the zinc sulfate group at 40 d of storage) were significantly higher than those in the control group(P<0.05) in the period of the 20 d to 60 d of storage, that the peroxide value of the zinc sulfate group was significantly higher than that of the control group at 10-60 d of storage(P<0.05), that the peroxide value of the zinc oxide group was significantly higher than that of the control group at 30-60 d of storage(P<0.05). There was no significantly difference between the peroxide value of the zinc glycine group and the control group at the 10-60 d of storage(P<0.05).
