摘  要:为了探究三文鱼(大西洋鲑与太平洋鲑)鱼生与淡水养殖虹鳟鱼生的鉴别方法,运用低场核磁共振技术扫描成像不同鱼生样品的脂肪及肉质纹理,再结合气相色谱法测定样品的不饱和脂肪酸的种类与含量,尤其是二十碳五烯酸(EPA)和二十二碳六烯酸(DHA)的含量,两种技术联用可以客观准确地对不同鱼生进行分类鉴别。海洋洄游性鱼类的多不饱和脂肪酸与淡水养殖鱼的多不饱和脂肪酸含量差异显著,本研究表明,结合低场核磁共振对鱼生的成像谱图,样品EPA+DHA的总量大于0.8g/100g,并且DHA的含量高于EPA,则可初步判定该样品为海洋洄游性三文鱼;若样品EPA+DHA的总量小于0.2g/100g,则可初步判定该样品为淡水养殖虹鳟。In order to explore the identification method of salmon(Atlantic salmon and Pacific salmon)sashimi and freshwater cultured rainbow trout sashimi,low field nuclear magnetic resonance(NMR)technology was used to scan the fat and texture of different sashimi samples,and gas chromatography was used to determine the type and content of unsaturated fatty acids,especially eicosapentaenoic acid(EPA)and docosahexaenoic acid(DHA).The combination of the two techniques can objectively and accurately identify different sashimi.There is a significant difference in the content of polyunsaturated fatty acids between marine migratory fish and freshwater cultured fish.This study shows that combined with low field magnetic resonance imaging,the total amount of EPA+DHA in the sample is more than 0.8g/100g,and the content of DHA is higher than EPA,so the sample can be judged as marine migratory salmon;if the total amount of EPA+DHA in the sample is less than 0.2g/100g,it can be preliminarily determined that the sample is rainbow trout cultured in freshwater.
