摘 要:目的建立炮制辅料葡萄醋的质量标准。方法参照《中国药典》(四部)pH值测定法(通则0631)、相对密度测定法(通则0601)、固体总量测定法(通则3101第二法)和GB 18187-2000《酿造食醋》总酸测定法测定14批葡萄醋样品的pH值、相对密度、固体总量及总酸含量。采用HPLC法测定葡萄醋中白藜芦醇和有机酸的含量。结果葡萄醋质量标准暂定为pH值25℃下不得超过5.06;相对密度20℃下不得超过1.126 g/mL;固体总量不得超1.121 g/L;总酸不得低于2.93%。葡萄醋中白藜芦醇含量不得低于1.75 mg/L,酒石酸含量不得低于0.821 g/L,琥珀酸含量不得低于0.225 g/L,柠檬酸含量不得低于5.165 g/L,苹果酸含量不得低于1.853 g/L,乙酸含量不得低于17.410 g/L。结论建立了炮制辅料葡萄醋质量标准。Objectives To establish the quality standard of madding grape vinegar.Methods The pH value,relative density,total solid content and total acid content of 14 batches of grape vinegar samples were determined by referring to pH value determination method(general rule 0631),relative density determination method(general rule 0601),total solid content determination method(general rule 3101 second method)and total acid determination method of GB 18187-2000 brewing vinegar.The content of resveratrol and organic acids in grape vinegar was determined by HPLC.Results The quality standard of grape vinegar is tentatively determined that the pH value should not exceed 5.06 at 25℃;the relative density should not exceed 1.126 g/mL at 20℃;the total amount of solid shall not exceed 1.121 g/L;the total acid content should not be less than 2.93%.The content of resveratrol,tartaric acid,succinic acid,citric acid,malic acid and acetic acid in grape vinegar should not be less than 1.75 mg/L,0.821 g/L,0.225 g/L,5.165 g/L,1.853 g/L and 17.410 g/L,respectively.Conclusions The quality standard of grape vinegar was established.
