摘  要:利用有机溶剂沉淀法提取木瓜不同部位的木瓜蛋白酶,并用考马斯亮蓝法及紫外分光光度法测定提取的木瓜不同部位的木瓜蛋白酶含量及活性,进而求出酶比活。通过计算出的酶比活来比较不同部位木瓜蛋白酶酶活力,最终得出木瓜皮蛋白酶的活力大于木瓜肉蛋白酶的活力,而木瓜肉蛋白酶的活力大于木瓜瓤蛋白酶的活力的结论,为木瓜蛋白酶的工业化提取提供了有力参考。The organic solvent precipitation method was used to extract papain from different parts of papaya,and the content and activity of papain in different parts of the extracted papaya were determined by Coomassie brilliant blue method and ultraviolet spectrophotometry,then the enzyme specific activitywas calculated.The calculated specific activity of the enzyme was used to compare the papain enzyme activity of different parts.It was concluded that the activity of papain was greater than that of papain,and the activity of papain was greater than that of papain,which provided a powerful reference for the industrial extraction of papain.
