摘  要:草菇(Volvariella volvacea)自溶主要是由于其细胞壁结构改变,细胞壁成分中的果胶和纤维素等物质降解所致。测定4℃和30℃温度下草菇自溶过程中果胶酶和纤维素酶的活性变化,结果显示草菇在4℃自溶过程中,果胶酶活力前期低后期高,纤维素酶活力前期高后期低;在30℃自溶过程中,果胶酶活力前期高后期低,纤维素酶前期、中期高后期低。表明草菇的自溶可能与果胶酶和纤维素酶的活性变化有关,且低温自溶和高温自溶的机制不同,结论为草菇自溶及保鲜研究提供了参考。The autolysis of Volvariella volvacea is mainly caused by the structure of cell wall and the degradation of cell wall components such as pectin and cellulose. The changes of activities of pectinase and cellulase in the autolysis process of V. volvacea at different temperatures showed that, in the autolysis process at 4℃, the changes of pectinase activity were high in later stage, the changes of cellulase activity were high in the earlier stage and low in the later stage. In the autolysis process at 30℃, the changes of pectinase activity were high in the earlier stage and low in the later stage, and the changes of cellulase activity were high in the earlier and the middle stage. The results showed that the autolysis of V. volvacea may be related to the changes of pectinase and cellulase activity, and the mechanisms of autolysis could be different at low temperature and high temperature. It provides a reference for the study of V. volvacea autolysis and preservation.
