摘  要:高浓度乙醇发酵技术具有高设备利用率、高乙醇浓度、高细胞密度和高发酵效率等优点,能够有效提高发酵成熟醪乙醇浓度,降低生产成本,提高装置生产能力,是乙醇发酵行业及科研机构的主要研究方向之一。简述了高浓度乙醇发酵技术的原理、特点以及面临的问题,对高浓度乙醇发酵国内外研究进展进行了综述,同时对高浓度乙醇发酵的发展前景进行了展望。High-gravity ethanol fermentation was featured by high utilization rate of equipment,high ethanol concentration,high cell density and high-efficiency fermentation.It could efficiently improve final ethanol content,enhance the production capacity,and reduce production cost.It is considered as the main research direction in ethanol industry and research institutes.The features and questions of Very high gravity(VHG)ethanol fermentation were introduced,research progress on VHG fermentation at home and abroad were reviewed,the prospect of VHG fermentation was prospected.
