摘  要:目的了解宿州市食品安全状况,开展食品安全风险分析、评估与预警,为制定切实有效的监管措施提供科学依据。方法2018—2020年按照《安徽省食品安全风险监测方案》的监测目的、要求和方法,采集和检测宿州市各类场所的各类食品样本。结果2018—2020年共监测9类259份食品样品,总体不合格率达28.6%(74/259);一般卫生指标不合格率达26.8%(51/190),其中熟制米面制品不合格率达100.0%(10/10)、冷冻饮品达48.8%(20/41)。食源性致病菌的检出率为12.2%(29/237),其中致病菌检出率最高的为铜绿假单胞菌12.5%(4/32),其次为蜡样芽胞杆菌11.3%(6/53)、单核细胞增生李斯特菌8.0%(13/163),有2份寿司食品样品同时检出蜡样芽胞杆菌、金黄色葡萄球菌和沙门菌。结论宿州市食品卫生状况不容乐观,受到多种食源性致病菌不同程度的污染,应加强食品安全风险监测。熟制米面制品、水产品及冷冻饮品/制品食源性致病风险较高,应重点防范。Objective To understand the food safety situation of Suzhou City,carry out the food safety risk analysis,assessment and early warning,and provide the scientific basis for formulating practical and effective supervisory measures.Methods According to the monitoring purposes,requirements and methods of Anhui Province Food Safety Risk Monitoring Program,all kinds of food samples from all kinds of places in Suzhou City were collected from 2018-2020.Results Totally 259 food samples of nine categories were monitored from 2018-2020,the overall unqualified rate reached 28.6%(74/259),the unqualified rate of general health indicators reached 26.8%(51/190).Among them,the unqualified rate of cooked rice and flour products reached 100.0%(10/10)and that of frozen drinks reached 48.8%(20/41).The detection rate of foodborne pathogenic bacteria was 12.2%(29/237).The detection rate of Pseudomonas aeruginosa was the highest[12.5%(4/32)],followed by Bacillus cereus[11.3%(6/53)]and Listeria monocytogenes[8.0%(13/163)].Bacillus cereus,Staphylococcus aureus and Salmonella were simultaneously detected in two sushi samples.Conclusion The general hygienic indexes of food in Suzhou City are not optimistic,which are contaminated with a variety of food-borne pathogenic bacteria at different degrees.It is necessary to continue to carry out the food safety risk monitoring.The cooked rice and flour products,aquatic products and frozen drinks/products are at high risk of foodborne illness,which should be carefully guarded against.
