摘  要:研究亚麻酸纳米乳的制备。比较亚麻酸在4种油相、3种乳化剂和2种助乳化剂中的溶解度,用伪三元相图筛选最优的亚麻酸纳米乳处方,通过抗氧化活性、包封率、TEM及抑菌活性等对制备的亚麻酸纳米乳进行评价。亚麻酸纳米乳的最优处方为2.26%亚麻酸、2.26%油酸、13.53%Tween-80、6.76%1,2-丙二醇、75.19%纯化水。亚麻酸纳米乳包封率为66.7%,外观呈球形,大小均匀无粘连,粒径约176 nm。测得亚麻酸纳米乳羟自由基清除率81.34%,超氧自由基清除率23.08%,DPPH自由基清除率10.34%,对两种常见菌种均有抑制作用。选择的处方工艺简单,为亚麻酸纳米乳的制备提供了参考。To study the preparation of linolenic acid nanoemulsion,the solubility of linolenic acid in four kinds of oil phases,three types of surfactants and two kinds of co-surfactants were evaluated,and the optimum formulation of linolenic acid nanoemulsion was screened via pseudo ternary phase diagram.The linolenic acid nanoemulsion was evaluated by antioxidant activity,encapsulation efficiency,TEM and antibacterial activity.The optimum formulation of linolenic acid nanoemulsion was 2.26%linolenic acid,2.26%oleic acid,13.53%Tween-80,6.76%1,2-propanediol and 75.19%water.The encapsulation efficiency of linolenic acid nanoemulsion was 66.7%.Linolenic acid nanoemulsion had spherical appearance and uniform size without adhesion.The hydroxyl radical scavenging rate was 81.34%,the superoxide radical scavenging rate was 23.08%,the DPPH free radical scavenging rate was 10.34%,and linolenic acid nanoemulsion inhibited two common strains.The selected prescription process was simple,which provided a reference for the preparation of linolenic acid nanoemulsion.
