摘  要:目的:研究池塘循环流水养殖模式(PRAS)和池塘养殖模式对鳜鱼(Siniperca chuatsi)肌肉营养品质的影响。方法:采用常规营养成分分析方法,分别对PRAS养殖鳜鱼与池溏养殖鳜鱼背部肌肉的粗蛋白、粗脂肪、水分、灰分、氨基酸及脂肪酸等指标进行分析,并对其营养品质进行评价。结果:PRAS养殖鳜鱼与池溏养殖鳜鱼背部肌肉水分、蛋白质、脂肪和灰分含量差异不显著,PRAS养殖鳜鱼的水分、干物质、粗蛋白、粗脂肪和灰分含量分别为70.89%±0.61%、29.11%±0.18%、62.40%±0.13%、10.15%±0.24%和14.93%±0.58%,而池溏养殖鳜鱼的分别为71.72%±0.78%、28.28±0.16、61.29%±0.14%、10.30%±0.25%和15.05%±0.39%。PRAS养殖鳜鱼与池溏养殖鳜鱼肌肉均检出17种氨基酸,PRAS养殖鳜鱼的风味氨基酸、必需氨基酸和氨基酸总量分别为(38.577±4.607) g/100 g、(30.870±1.855) g/100 g和(78.124±3.371) g/100 g,而池溏养殖鳜鱼分别为(35.750±4.120) g/100 g、(27.898±1.731) g/100 g和(71.954±3.064) g/100 g。PRAS养殖鳜鱼与池溏养殖鳜鱼肌肉必需氨基酸指数分别为65.33%和63.32%,基本符合FAO/WHO的标准。养殖前后鲫鱼肌肉均检出23种脂肪酸,PRAS养殖鳜鱼肌肉中饱和脂肪酸和不饱和脂肪酸分别为(5.514 7±1.395 3) g/100 g和17.591 5 g/100 g,而池溏养殖鳜鱼分别为(5.626 7±1.413 1) g/100 g和17.479 6 g/100 g。鳜鱼经过PRAS养殖后其肌肉中的不饱和脂肪酸含量得到了增加,其中C22∶6n3(DHA)与C20∶5n3(EPA)含量增加最明显。结论:根据氨基酸评分、化学评分和综合分析认为,鳜鱼经过PRAS养殖后具有较高的食用价值与保健作用,符合人们对于健康生活的追求。Objective:To investigate the effect of pond recirculating aquaculture systems(PRAS)culture mode on the muscle nutritional quality of Siniperca chuatsi,the pond culture mode was selected as control.Methods:The contents of the main nutrients such as protein,fat,moisture,ash were analysed,and the contents of the amino acids and fatty acids in its muscle were determined for PRAS-and pond-cultured S.chuatsi.Moreover,its nutritional value was evaluated and compared with other fishes.Results:The results showed that there was no significant difference between PRAS-and pond-cultured S.chuatsi in the contents of moisture,protein,lipid and ash of its muscles.The moisture,dry matter,total protein,lipid and ash contents were 70.89%±0.61%,29.11%±0.18%,62.40%±0.13%,10.15%±0.24%and 14.93%±0.58%,respectively,for PRAS-cultured S.chuatsi,and were 71.72%±0.78%,28.28±0.16,61.29%±0.14%,10.30%±0.25%and 15.05%±0.39%,respectively,for pond-cultured S.chuatsi.There were 17 kinds of free amino acids found in muscles of PRAS-and pond-cultured S.chuatsi.The contents of total amino acids(TAAs),free essential amino acids(EAAs)and flavoring amino acids(FAAs)as dry mass were(78.124±3.371)g/100 g,(30.870±1.855)g/100 g and(38.577±4.607)g/100 g,respectively,in PRAS-cultured S.chuatsi,and were(71.954±3.064)g/100 g,(27.898±1.731)g/100 g and(35.750±4.120)g/100 g in pond-cultured S.chuatsi.Amino acids score(AAS)and chemical score(CS)showed that the essential AAs index(EAAI)was 65.33 in PRAS-cultured S.chuatsi and 63.32 in pond-cultured S.chuatsi.According to AAS and CS,which basically accorded with the issued standard value by FAO and WHO.The 23 kinds of fatty acids were determined in the muscles of PRAS-and pond-cultured S.chuatsi.The contents of saturated fatty acid(SFA)and unsaturated FA(MUFA+PUFA)were respectively(5.5147±1.3953)g/100 g and 17.5915 g/100 g in PRAS-cultured S.chuatsi and were(5.6267±1.4131)g/100 g and 17.4796 g/100 g in pond-cultured S.chuatsi.The content of unsaturated fatty acids(monounsaturated fatty acids+polyuns
