摘 要:为提高苹果片干燥效率及品质,将苹果片进行乙醇联合超声波预处理,探究不同预处理条件下苹果片干燥速率及品质的变化,并建立其干燥数学模型。结果表明,苹果片经乙醇联合超声波预处理后在60℃干燥条件下远红外干燥,其干燥时间显著缩短(较其他处理组缩短36.5%~62.5%),较未处理组苹果干片色差值较低,总酚、总黄酮含量较高,抗氧化活性较强,并且乙醇联合超声波处理60 s后干燥苹果片的总酚、总黄酮含量最高(总酚含量为22.8 mg/g,总黄酮含量为8.6 mg/g),抗氧化能力最强(DPPH自由基清除能力为58.5%,FRAP铁离子还原力为2.8 mg AAE/g)。通过对干燥数据进行拟合得到Page模型的拟合效果较高,能够很好地模拟乙醇联合超声波处理后远红外干燥苹果片干燥过程。相比单一乙醇预处理及未处理远红外干燥方式,乙醇联合超声波处理后干燥苹果片的干燥效率较高,干燥后品质较好,故乙醇联合超声波处理是一种优良的苹果片干燥前处理方式,可用于指导实际生产。In order to improve the drying efficiency and quality of apple slices,apple slices were pretreated with ethanol combined with ultrasonic.The changes of drying rate and quality of apple slices under different pretreatment conditions were explored,and the drying mathematical model was established.The results showed that the drying time of apple slices pretreated by ethanol combined with ultrasonic under 60℃drying condition was significantly shortened(36.5%~62.5%shorter than other treatment groups),the color difference value of apple slices pretreated by ethanol combined with ultrasonic was lower,the content of total phenols and total flavonoids was higher,and the antioxidant activity was stronger.The total phenols and total flavonoids of apple slices pretreated by ethanol combined with ultrasonic for 60 s were highest(The content of total phenols was 22.8 mg/g and total flavonoids was 8.6 mg/g),the antioxidant capacity was the strongest(DPPH radical scavenging capacity was 58.5%,FRAP iron reduction capacity was 2.8 mg AAE/g).By fitting the drying data,the page model has a high fitting effect,which can well simulate the far infrared drying process of apple slices after ethanol combined with ultrasonic treatment.Compared with single ethanol pretreatment and untreated far-infrared drying method,ethanol combined with ultrasonic treatment has higher drying efficiency and better quality.Therefore,ethanol combined with ultrasonic treatment is an excellent drying pretreatment method for apple slices,which can be used to guide actual production.
