摘 要:为研究影响桑叶绿茶γ-氨基丁酸(γ-amino butyric acid, GABA)的质量分数及茶叶感观品质的加工参数,制备兼顾高GABA质量分数和感观品质的桑叶绿茶。试验以药桑叶绿茶为研究对象,在单因素试验的基础上,对提高药桑叶绿茶中γ-氨基丁酸(GABA)质量分数和感观评分的滚筒杀青工艺进行优化,选择杀青温度、杀青时间、投叶量3个因素为自变量,以GABA质量分数与感观品质的综合评分为响应值,采用响应面分析法优化药桑叶绿茶的滚筒杀青工艺。结果表明:最佳工艺条件是杀青温度240℃、杀青时间145 s、投叶量33 kg/h。该条件下生产药桑叶绿茶的感官评分预测值为0.88分,验证试验所得实际值为0.89分,实测结果与预测值吻合良好。该工艺生产的药桑叶绿茶汤色黄亮,滋味鲜醇,清新宜人。在最佳工艺下制备的药桑叶绿茶GABA质量分数达4.2 mg/g,比加工前的3.3mg/g增加了27.27%,达到了高质量分数GABA绿茶的标准。该试验为滚筒杀青技术加工功能茶提供了参考。In order to study the processing parameters affecting the content of γ-amino butyric acid(GABA) and the sensory quality in mulberry green tea, and to prepare the mulberry green tea with both high GABA content and sensory quality, the production of Morus nigra green tea with higher γ-aminobutyric acid(GABA) content and quality evaluation was optimized by investigating the effects of the parameters including fixation temperature, time and leaf weights of rotary continuous fixation on synthetical mark of GABA content and sensory evaluation by single factor method and response surface methodology. The results showed that the optimum process parameters were 240 ℃, 145 s and 33 kg/h. The predicted and observed comprehensive evaluation scores of Morus nigra green tea obtained under these conditions were 0.88 and 0.89 points, respectively, suggesting good agreement. The prepared Morus nigra green tea soup had high clarity, delicate fragrance and rich flavor and it satisfied scientific criteria of GABAron tea. Its content of GABA reached 4.2 mg/g, which was 27.27% higher before processing. This study provided a practical reference for rotary continuous fixation technology for the processing of Morus nigra functional tea.
