摘 要:【目的】探明壳聚糖在山楂贮藏过程中的保鲜效果,为延长山楂保鲜期提供技术支撑。【方法】采用不同浓度的壳聚糖溶液(1%壳聚糖溶液、1.5%壳聚糖溶液、2%壳聚糖溶液、1%壳聚糖+1%抗坏血酸混合溶液、1%壳聚糖+1.5%抗坏血酸混合溶液、1.5%壳聚糖+1%抗坏血酸混合溶液和1.5%壳聚糖+1.5%抗坏血酸混合溶液)涂膜处理山楂,常温贮藏情况下定期测定山楂的果实硬度、失重率、Vc含量、可滴定酸含量、可溶性总糖含量和果实腐烂率等生理指标,分析壳聚糖涂膜处理对山楂的贮藏保鲜效果。【结果】壳聚糖涂膜处理可有效降低贮藏过程中山楂的腐烂率,其中以1%壳聚糖涂膜处理山楂的保鲜效果最好,山楂的贮藏时间较常规贮藏延长1个月左右,山楂果实的外观品质和内容物含量相对较高。【结论】在山楂贮藏过程中,使用1%壳聚糖涂膜处理可有效延长山楂贮藏保鲜期。【Objective】The effect of chitosan on preservation of hawthorn duration of storage is discussed to provide the technical support for extension of hawthorn preservation.【Method】The effect of chitosan coating treatment on preservation of hawthorn is analyzed by determining the fruit hardness,weight loss rate,Vc content,titratable acid content,total soluble sugar content and rotting rate of hawthorn fruits coated with chitosan solution with different concentrations(1%chitosan,1.5%chitosan,2%chitosan,1%chitosan+1%ascorbic acid,1%chitosan+1.5%ascorbic acid,1.5%chitosan+1.0%ascorbic acid and 1.5%chitosan+1.5%ascorbic acid)at fixed period under storage of room temperature.【Result】The chitosan coating treatment can reduce the rotting rate of hawthorn duration of storage and the preservation effect of 1%chitosan coating treatment is the best among 7 treatments.The storage time of 1%chitosan coating treatment is 30 d longer than the convention storage treatment and its exterior quality and related matter content are better than those of other treatments.【Conclusion】The 1%chitosan coating treatment can prolong preservation of hawthorn duration of storage effectively.
