摘 要:利用密度声速仪、水分活度仪、电导率仪和近红外光谱仪,测定了不同乙醇体积分数和贮存时间下乙醇溶液的部分物理特性。结果表明,不同体积分数乙醇溶液的声速值、水分活度和电导率均存在差异,且同一种体积分数乙醇溶液在贮存不同时间,声速、水分活度和电导率也分别发生变化;近红外光谱(NIR)结果表明,低体积分数乙醇溶液(5%和14%)自由羟基吸收峰强于高体积分数乙醇溶液(38%和45%),猜测是高体积分数乙醇溶液中大部分羟基与乙醇分子或水分子形成了氢键,这种氢键随着乙醇体积分数变化发生改变,且变化速度比较缓慢,从而影响不同体积分数或不同贮存时间乙醇溶液的物理特性。该结论提出了乙醇-水微观结构对乙醇溶液物理特性的影响,为乙醇产品质量的分析和监测奠定了理论基础。Some physical properties of ethanol solution under different ethanol volume fraction and storage time were measured by density and sound velocity meter,water activity meter,conductivity meter and near-infrared spectrometer.The results showed that the sound velocity,water activity and conductivity of ethanol solutions of different volume fraction were different,and the sound velocity,water activity and conductivity of the ethanol solution of same volume fraction changed during different storage time.The results of near-infrared spectroscopy(NIR)showed that the free hydroxyl absorption peaks of low-volume fraction ethanol solutions(5%and 14%)were stronger than that of high-volume fraction ethanol solutions(38%and 45%).It is guessed that most of the hydroxyl groups with ethanol molecules or water molecules formed hydrogen bonds in the high-volume fraction ethanol solution.This hydrogen bond changed with the change of ethanol volume fraction,and the change rate was relatively slow,thereby affecting the physical properties of ethanol solutions of different volume fractions or storage time.This conclusion put forward the effects of ethanol-water microstructure on the physical properties of ethanol solution,and laid theoretical foundation for the analysis and monitoring of ethanol product quality.
