摘 要:以紫苏(Perilla frutescens)籽为试验材料,研究储藏时间、储藏温度及杂质含量对其品质的影响。结果表明:随着储藏时间的延长,发芽率、含油量、出油率逐渐下降,储藏温度越高,下降速率越显著;脂肪酸成分中亚麻酸含量逐渐下降,亚油酸、油酸、硬脂酸含量逐渐增加,棕榈酸含量变化不明显;酸值和过氧化值逐渐升高,上升速率35℃处理>25℃处理>4℃处理。随着杂质含量的增加,紫苏籽出油率明显下降;脂肪酸成分中亚麻酸含量显著下降、脂肪酸值和过氧化值上升明显。为保证紫苏籽制油品质,长期储藏时应置于低温环境,同时,应避免使用常温储藏超过8个月的紫苏籽进行生产加工,且杂质含量应控制在3%以下。Perilla(Perilla frutescens)seeds were used as test material to study the effects of storage time,storage temperature and impurity context on their oil quality.The results indicated that,with the increasing storage time,the germination rate,oil content and oil yield gradually decreased,and the higher the storage temperature,the more significant decline rate.For the fatty acids,the content of linolenic acid gradually decreased,meanwhile,the contents of linoleic acid,oleic acid and stearic acid gradually increased.There was no observed change for the content of palmitic acid.The acid value and peroxide value,both of them gradually increased,from highest to lowest,under 35℃,25℃and 4℃.With the increase of impurity content,the oil yield dramatically reduced.The content of linolenic acid in fatty acid composition significantly decreased,and values of acid and peroxide significantly increased.In order to pursue the better oil quality,the perilla seeds should be placed in a low temperature for long-term storage.At the same time,the seeds which are stored at room temperature for over 8 months must be avoided for the production and processing,and impurity content should be restricted within 3%.
