摘 要:采用热泵干燥技术分别在20℃和40℃下干燥方格星虫,以热风干燥作对照,通过干燥曲线评价干燥效率,结合干燥时间、水分含量、挥发性盐基氮(TVB-N)、复水率和感官评价,研究干燥方式对方格星虫干品品质的影响。结果表明,方格星虫干燥效率为40℃热泵干燥>60℃热风干燥>20℃热泵干燥。干燥至最终水分含量为11%~12%时,40℃热泵干燥仅需2 h,其干燥速率是20℃热泵干燥的4.5倍。干燥后的方格星虫干品具有与20℃热泵干燥相同的高复水率和水煮效果,40℃热泵干燥处理后的方格星虫干品TVB-N含量略高于20℃热泵干燥含量,但比热风干燥组显著降低27%,品质较优。因此,3种干燥方式中,以40℃热泵干燥方格星虫干燥效果最佳。Heat pump drying technology was used to dry Sipunculus nudus at 20℃and 40℃respectively,and the hot air drying was used as control.The drying efficiency was evaluated by drying curve.The effects of drying methods on the quality of Sipunculus nudus were studied by drying time,moisture content,volatile basic nitrogen(TVB-N),rehydration rate and sensory evaluation.The results showed that the drying efficiency of Sipunculus nudus from high to low was 40℃heat pump drying>60℃hot air drying>20℃heat pump drying.When the final moisture content of Sipunculus nudus reached to 11%~12%,the technology of 40℃heat pump drying only took 2 h,and its drying rate was 4.5 times of 20℃heat pump drying.Meanwhile,its dried Sipunculus nudus owned the same high rehydration rate and excellent boiling effect as 20℃heat pump drying.Although the TVB-N content of Sipunculus nudus dried by 40℃heat pump drying was slightly higher than that of heat pump drying at 20℃,it was also significantly lower by 27%than that of hot air drying,and with better quality.Therefore,among the three drying methods,40℃heat pump drying was the best for Sipunculus nudus drying.
