摘  要:为了解CO_(2)脱涩处理对九倍体涩柿品种‘平核无’果实生理品质的影响,本实验采用分光光度法和液相色谱-质谱法等方法,对CO_(2)脱涩处理前后‘平核无’果实的生理品质进行系统研究。结果表明,CO_(2)脱涩处理后,果实可溶性固形物质量分数以及果实硬度略有降低但仍保持较高水平;可溶性单宁含量下降至可食用范围;丙二醛、多酚含量和多酚氧化酶活力显著下降(P<0.05),而总黄酮和抗坏血酸含量以及过氧化物酶、超氧化物歧化酶、过氧化氢酶、抗坏血酸过氧化物酶活力显著上升(P<0.05),表明活性氧清除酶和非酶抗氧化剂可以有效地改善由高CO_(2)、低O2环境引起的氧化压力失衡,维持氧化还原反应的平衡状态。代谢组学正、负离子模式分别鉴定出9957个和8984个特征离子,其中分别有6817个和4726个代谢过程被注释,与对照相比,55个和11个差异代谢物分别被上调和下调,其中包括6个类黄酮代谢产物下调和14个氨基酸代谢产物上调,本实验可为优良品种‘平核无’的进一步推广以及CO_(2)脱涩处理技术影响果实品质的研究提供理论依据。In this study,the effect of CO_(2) deastringency treatment on the physicochemical properties of‘Hiratanenashi’persimmon fruit was analyzed.The results revealed that after treatment with CO_(2),soluble solid content and fruit firmness were maintained at a high level despite a slight decrease,soluble tannin content was decreased to an acceptable level for consumption,the contents of malonodialdehyde(MDA)and polyphenols and the activity of polyphenol oxidase(PPO)were significantly reduced(P<0.05),and total flavonoid and ascorbic acid contents and the activity of peroxidase(POD),superoxide dismutase(SOD),catalase(CAT)and ascorbate peroxidase(APX)were increased significantly(P<0.05).This suggests that reactive oxygen species(ROS)-scavenging enzymes and non-enzymatic antioxidants can effectively scavenge the oxidative stress induced by high-CO_(2)/hypoxic atmosphere and maintain redox balance.In addition,9957 and 8984 characteristic ions were identified using metabolomics in the positive and negative ion modes,respectively,with 6817 and 4726 of them being annotated,respectively.In the comparison with the untreated control group,a total of 55 and 11 metabolites were found to be up-and down-regulated,respectively,including 6 down-regulated flavonoids metabolites and 14 up-regulated amino acids metabolites.Together,these results study provide valuable information on the effects of CO_(2)-deastringency treatment on persimmon fruit and will contribute to the ongoing popularization of‘Hiratanenashi’.
