摘 要:目的调查某大学城高校食堂卫生设施及餐具消毒状况,为完善高校的食堂卫生管理及餐具消毒规范化提供数据参考。方法调查食堂卫生设施管理及从业人员卫生情况,选择29个采样点的碗、筷子、勺子、盘子共594份餐具进行感官指标的检测,并采用纸片法检测大肠菌群指标。结果食堂食材储藏室卫生和防蝇防尘设施合格率均为89.47%,其余卫生设施合格率为100.00%,从业人员的个人卫生合格率为84.09%。594份餐具的感官指标总合格率为83.33%,大肠菌群指标的总合格率为79.81%,其中勺子的2个指标合格率分别为73.61%、72.92%。结论食材储藏室卫生、防蝇防尘设施及从业人员卫生需加强管理及完善,加强餐具洗消步骤监督,保障餐具存储环境的卫生。Objective To investigate the disinfection status of sanitary facilities and tableware of the canteen in a university,so as to provide data reference for improving the sanitary management of the canteen and the standardization of tableware disinfection in universities.Methods This experiment investigated the management of canteen sanitation facilities and the sanitation of employees.594 tableware including bowls,chopsticks,spoons,and plates from 29 sampling points were selected to detect sensory indicators,and the paper method was used to detect coliform indicators.Results The qualification rate of the food storage room in the canteen is 89.47%,the qualification rate of the anti-fly and dust-proof facilities is also 89.47%,and the qualification rate of the rest of the sanitary facilities is 100.00%.The qualification rate of personal hygiene of employees was 84.09%.The total qualification rate of sensory indicators of 594 tableware was 83.33%,the total qualification rate of coliform indicators was 79.81%,and the qualification rates of the two indicators of spoon were 73.61%and 72.92%,respectively.Conclusion The sanitation of food storage rooms,fly-proof and dust-proof facilities and the sanitation of employees in college canteens need to be managed and improved.In addition,it is necessary to strengthen the supervision of tableware decontamination steps to ensure the sanitation of the tableware storage environment.
