摘  要:目的了解杭州市售罐头食品中铅(Pb)、铬(Cr)、汞(Hg)、砷(As)、镉(Cd)和镍(Ni)污染状况,并对罐头食品摄入情况进行评估。方法随机采集杭州市售罐头食品,采用《食品中多元素的测定》(GB 5009.268—2016)检测;用人均每周摄入量和平均体质量估算6种有害元素每周摄入量。结果95份罐头食品中6种元素的检出率在40.0%~97.9%,无超标样品;除水产品罐头中总砷的每周平均暴露量为15.5μg/(kg·BW),超过PTWI值,其余不同种类罐头食品中6种有害元素的每周平均暴露量均未超过PTWI值。结论杭州市售罐头食品中普遍检出铅、铬、汞、砷、镉和镍;风险评估结果显示,除水产罐头中总砷以外,居民通过罐头食品摄入的有害元素对健康造成的风险处于低水平,水产罐头中总砷的污染可能给高消费人群带来一定的健康风险。Objective To investigate 6 harmful elements including lead,cadmium,chromium,mercury,arsenic and nickel contamination in canned food in Hangzhou,and evaluate their dietary exposure to the consumers.Methods The samples were collected randomly and detected according to Determination of Multi Elements in Food(GB 5009.268—2016).Meanwhile,the weekly intake of 6 harmful elements was estimated by the average weekly intake of canned food and the average body weight.Results The detection rates of 6 harmful elements in canned food were within 40.0%-97.9%,and no sample exceeded the national hygienic standards.The amount of intake exposure of arsenic from canned aquatic products was 15.5μg/(kg·BW)per week,which exceeded the PTWI,and the weekly average exposure of six harmful elements in other kinds of canned food did not exceed the PTWI.Conclusion Lead,chromium,mercury,arsenic,cadmium and nickel were commonly detected in canned foods.The risk assessment results show that the health risk of consumers by the intake of 6 harmful elements is at a low level,but the pollution of arsenic in canned aquatic products may bring certain health risks to high consumers.
