摘 要:目的建立离子交换固相萃取-气相色谱/质谱检测油脂中辣椒素类物质的新方法。方法油脂类样品通过正已烷稀释、分散后,乙腈提取其中待测物,并经固相萃取浓缩、净化,氨化甲醇洗脱,衍生后气相色谱-质谱(gas chromatography-mass sepetrometry,GC-MS)测定。结果新方法对辣椒素类物质的检出限可达0.001 mg/kg,在浓度0.003~0.50 mg/kg范围内线性关系良好,样品加标回收率为84.0%~116%,相对标准偏差≤5.1%(n=5)。结论新方法灵敏、准确,检测辣椒素类由烹饪过程带入而非油脂固有的成分,作为鉴别潲水油的手段,具有良好的操作性。Objective To develop a new analytical method for determination of capsaicins in hogwash oil using solid-phase extraction and gas chromatography-mass sepetrometry(GC-MS).Methods The samples were extracted with acetonitrile after separation of oil with hexane,and further clean-up procedures were used through liquid-liquid extraction and solid-phase extraction to remove co-extracted molecular interference.Results The results showed that the detection limit of the new method was 0.001 mg/kg,and it presented favorable linearity in the range of 0.003-0.50 mg/kg.The recoveries of capsaicins were 84.0%-116%,and the relative standard deviations(RSDs)were less than or equal to 5.1%(n=5).Conclusion This new method is sensitive,accurate and easy to operation,and it can be applied to detecting capsaicins as an exogenous index in hogwash oil.
