摘 要:了解近几年重庆市渝东南地区市售白酒中甜蜜素及糖精钠的使用情况,为居民选购安全放心食品和行政部门监管提供参考依据。2017年-2020年从重庆市渝东南地区4个区县共采集1776份样品,采用高效液相色谱法,液相色谱-质谱/质谱法进行糖精钠及甜蜜素的测定,并对检测结果进行分析。结果发现,1776批次白酒样品中,共检出甜蜜素及糖精钠样品58批次,不合格率为3.26%;其中甜蜜素不合格样品55批次,不合格率为3.10%;糖精钠不合格样品3批次,不合格率为0.17%;甜蜜素检出最高含量为0.661 g/kg;2017年-2019年市售蒸馏白酒中的甜蜜素及糖精钠检出率和超标率下降趋势极显著(p<0.01)。蒸馏白酒中甜蜜素及糖精钠超标的主要为个体经营者生产的样品,且主要为生产环节中的白酒样品。由此可见,重庆市渝东南地区存在个人或企业非法添加甜蜜素及糖精钠等甜味剂的状况,应重点加强城镇地区个人及生产企业散装蒸馏白酒中甜蜜素抽检和监管力度,以保障市民消费安全。We analyzed the use status of sodium cyclamate and saccharin sodium in Baijiu sold in Chongqing in recent years,so as to provide reference for residents to purchase safe food and for administrative departments to conduct supervision.From 2017 to 2020,a total of 1776 Baijiu samples were collected from four districts and counties in the southeast area of Chongqing.High performance liq-uid chromatography and liquid chromatography-mass spectrometry/mass spectrometry were used to determine the contents of saccha-rin sodium and sodium cyclamate in the samples,and the test results were analyzed.Among the 1776 Baijiu samples,sodium cycla-mate and saccharin sodium were detected in 58 samples(3.26%);sodium cyclamate was detected in 55 samples(3.10%),and sac-charin sodium was detected in 3 samples(0.17%).The highest detected content of sodium cyclamate was 0.661 g/kg.From 2017 to 2019,the detection rate and over-standard rate of sodium cyclamate and saccharin sodium in Baijiu declined significantly(p<0.01).The over-standard samples were mainly produced by individual operators,and were mainly found in the production chain.The results demonstrated that there were some individual operators or companies illegally adding sweeteners into their Baijiu products.We should focus on strengthening the sampling inspection and supervision of sweeteners in bulk Baijiu produced by individual operators in urban areas,so as to protect residents’consumption safety.
