摘  要:欧李是根据我国特有野生灌木果树树种选育的新兴补钙保健水果,其果实具有独特的浓郁香气,营养价值高,由于含有高含量的钙而被称为钙果,非常适合加工成各种产品,近年来成为研究与利用的热点,在食品、营养、保健、医疗行业等方面都有十分广阔的应用前景,但目前未形成产业化的发展,加工产品比较单一、局限。本文总结了近年来欧李开发的深加工产品,分析了当前研究中存在的问题,提出了解决思路并进行了进一步展望,以期为新型欧李深加工产品的开发提供理论依据。Prunus humilis is a new health fruit for calcium supplementation,which is bred according to the unique wild shrub tree species in China.Its fruit has unique rich aroma and high nutritional value.Because of its high content of calcium,it is called calcium fruit,which is very suitable for processing into various products.In recent years,it has become a hot spot in research and utilization,and has a very broad application prospect in food,nutrition,health care,medical care and other fields.However,there is no industrialization development at present,and the processed products are relatively single and limited.In this study,the deep processing products developed by Prunus humilis in recent years were summarized,the existing problems in current research were analyzed,and the solutions were proposed and further prospects was made,in order to provide theoretical basis for the development of new Prunus humilis deep processing products.
