摘  要:为提高向海雁资源的附加值,以向海雁的加工副产物雁掌黄皮为原料,采用单因素试验和正交试验确定向海雁雁掌黄皮多肽的提取工艺,利用凝胶排阻色谱确定其相对分子质量的分布,并对其进行抗氧化活性研究。结果表明:向海雁雁掌黄皮多肽酶解工艺为加酶量4 000 U/g、酶解温度55℃、酶解时间5 h、pH 7,此时向海雁雁掌黄皮多肽水解度为28.07%;当向海雁雁掌黄皮多肽添加量为12 mg/mL时, OH自由基和O2-自由基最高清除率分别为70.45%和72.68%;当向海雁雁掌黄皮多肽添加量为200μg/mL时,大鼠血管内皮细胞中MDA生成含量减少, SOD活力上升。综上,向海雁雁掌黄皮多肽酶解工艺方便可行,制备得到的多肽具有较强抗氧化活性,该试验为向海雁资源的充分开发利用提供理论基础。In order to increase the added value of Anser cygnoides resources, single factor experiment and orthogonal experiment were used to determine the extraction process of polypeptides from the processing by-product of Anser cygnoides’ palm, and the molecular weight distribution was determined by gel exclusion chromatography. And its antioxidant activity was studied. The results showed that the enzymatic hydrolysis process of polypeptides from the Anser cygnoides’ palm was as follows: the amount of enzyme added was 4 000 U/g, the enzymatic hydrolysis temperature was 55 ℃, the enzymatic hydrolysis time was 5 h, and the pH was 7. At this time, the hydrolysis degree of polypeptides from the Phyllostachys palmatoides was 28.07%. When adding 12 mg/mL of polypeptide to the yellow skin of Anser cygnoides’ palm, the highest scavenging rates of OH radical and O2-radical were 70.45% and 72.68%, respectively. The content of MDA in rat vascular endothelial cells decreased and SOD activity increased when adding 200 g/mL polypeptide to Anser cygnoides palm yellow skin. In conclusion, the enzymatic hydrolysis of polypeptides from the yellow skin of the Anser cygnoides’ palm optimized was convenient and feasible, and the prepared polypeptides had relatively strong antioxidant activity, providing a theoretical basis for the full development and utilization of the Anser cygnoides resources.
