摘  要:随着中国食品工业的快速发展和化学合成技术的进步,食品添加剂品种不断增加,食品添加剂发展的同时人们对食品添加剂的安全性也越来越为重视。葡萄籽提取物是一种较好的天然添加剂,含有大量多酚类物质,具有抗氧化、抗疲劳、清除自由基、预防心血管疾病、延缓衰老、抗癌和抗菌等生物活性。葡萄籽提取物既可以满足食品行业对添加剂的需求,同时也可以提供一定保健功能和防腐保鲜的作用。试验对葡萄籽提取物的研究现状、提取方法、生物活性及其在食品防腐保鲜中的作用进行介绍。With the rapid development of my country’s food industry and the progress of chemical synthesis technology, the variety of food additives continues to increase. With the development of food additives, more and more attention is paid to the safety of food additives. Grape seed extract is a good natural additive. It contains a lot of polyphenols. It has biological activities such as anti-oxidation, anti-fatigue, scavenging free radicals, preventing cardiovascular disease, delaying aging, anticancer and anti-bacterial. Grape seed extract can not only meet the needs of the food industry for additives, but also provide certain health functions and anti-corrosion and fresh-keeping effects. The research status of grape seed extract, extraction method, biological activity and its role in food preservation and preservation is mainly introduced.
