摘  要:对食用槟榔菌落总数检测过程的不确定度进行评定。按照食品中菌落总数测定方法,同时参考JJF 1059.1—2012测量不确定度评定与表示,依据试验过程建立数学模型,分析菌落总数检测结果的不确定度来源,对过程中引入的不确定度分量进行评定,计算合成标准不确定度。结果表明,食用槟榔中菌落总数的合成标准不确定度为0.0732,扩展不确定度为0.1654,菌落总数的含量范围结果估计值为129~279 CFU/g。样品称量对不确定度影响最大,重复性、加样过程、样品稀释与样液制备次之。This study evaluated the uncertainty of the detection process of the total number of edible betel nut colonies.The experiment uses the edible betel nut during processing to detect the total number of colonies,and refers to JJF1059.1—2012《Evaluation and expression of uncertainty in measurements》,establish a mathematical model based on the experimental process and analyze the source of uncertainty in the detection results of the total number of colonies,evaluate the uncertainty components introduced in the process,and calculate the synthetic standard uncertainty.The results showed that the synthetic standard uncertainty of the total number of colonies in edible betel nut was 0.0732,the expanded uncertainty was 0.1654,and the estimated range of the total number of colonies was 129~279 CFU/g.The sample weighing had the greatest influence on the uncertainty,followed by repeatability,sample adding process,sample dilution and sample preparation.
